ive vreated a vector image, and in various points i need to delete part of the inside of a fill
how do i go about doing that
as at present am justputting a layer of white over the top
and as soon as i take it into photoshop as an eps, those whites still remain?!

You need to make a path(s) for the area(s) you want transparent and then select that path(s) and the "master" one and make a compound path under the object->path menu in Illustrator.

You can also the same thing with the Trim command if I read you right.

Its inthe path finder pallete...but eating your apple is problaby faster

nope thats not working

what i did was, clicked the path i want to make transparent, pressed ctrl+8
saved it as a eps
took it into photoshop and that area is still white
i want it to be see through

You have to select two paths. The donut and the hole so to speak. When you apply a compaound path you will see on the screen that the fill of the first path will disappear where the second path is leaving a transparent hole.

The donut so to speak has to be in the back and the path that will make the hole has to be on top.

Select the hole path and hit ctrl+] to bring to front.
